白珍珠來自法國的南部，會先在海中養大，等到成熟時期就會放到河中靜養一段時間，然後才出水。
所以佢有濃郁的海水鹹鮮味，但咬破蠔肚之後會覺得非常清甜爽口，裙邊和蠔身比較爽滑彈牙，回味甘甜，呢款係鮮后最愛之一。
