一般的皇帝蟹小的也有5斤以上,所以最好一蟹多吃,各部分需要適當料理才會發揮其美味。可以清蒸,因為清蒸最能展現皇帝蟹的鮮美。上桌後都是用勺子來吃,每口都是蟹肉,更能凸顯其肉質的鮮甜。而後腿和蟹身則用上湯或者芝士配伊面焗,此種方式和清蒸相比,西式味道更重,與鮮甜會產生味覺對比,再加上皇帝蟹蟹肉比龍蝦來得有勁道,配合進味的伊面更覺好吃。最後是蟹殼用花雕酒蛋清蒸,一勺下去,又有蛋清更有蟹膏,入口香濃,鮮味十足,一定是愛膏人士最愛。
