Description

澳洲雪蟹，又名水晶蟹，別名公主蟹、貴妃蟹，這種蟹全身雪白幾近透明，是一種較為珍稀的蟹類，也是一種馳名蟹類食材之一。

牠們主要產地在澳大利亞西南部，其對生長環境要求很高，只能生長在0℃以下的千米深海中，產量稀少，據說全球每周捕撈量只有2噸，比野生龍蝦還矜貴。

澳洲水晶蟹每隻重量約2斤左右，也造就了其體型壯實和肉質飽滿。與其它雪蟹相比，全身的顏色比較淡，近乎雪白，就連加熱烹飪後也不會變色。而且，澳洲雪蟹的蟹殼比較軟，而它的肉厚膏肥，可謂是皮薄餡大，蟹肉飽滿多汁，肉質細膩幼滑、鮮甜可口，還略帶韌性，風味十分獨特，是雪蟹中的上品。
