Description

基圍蝦又稱刀額新對蝦，麻蝦等，它是在淡水中育種，然後再用海水圍基養殖的，所以叫“基圍蝦”，主要分佈於日本東海岸，中國東海與南海，菲律賓，馬來西亞，印尼及澳大利亞一帶。中國沿海5〜8月為產卵盛期。
 
基圍蝦形態像對蝦，但它的殼比對蝦軟，體形沒有對蝦大，一般如中指大小，廣東沿海的河口海區產量較高，且體肥殼薄，肉質鮮美爽口。牠們是一種蛋白質非常豐富，營養價值很高的食物，其中維生素A，胡蘿蔔素和無機鹽含量比較高，而脂肪含量不但低，且多為不飽和脂肪酸，具有防治動脈粥樣硬化和冠心病的作用。另外，蝦的肌纖維比較細，組織蛋白質的結構鬆軟，水分含量較多，所以肉質細嫩，容易消化吸收，適合病人，老年人和兒童食用。
