Description

基圍蝦又稱刀額新對蝦,麻蝦等,它是在淡水中育種,然後再用海水圍基養殖的,所以叫“基圍蝦”,主要分佈於日本東海岸,中國東海與南海,菲律賓,馬來西亞,印尼及澳大利亞一帶。中國沿海5〜8月為產卵盛期。
 
基圍蝦形態像對蝦,但它的殼比對蝦軟,體形沒有對蝦大,一般如中指大小,廣東沿海的河口海區產量較高,且體肥殼薄,肉質鮮美爽口。牠們是一種蛋白質非常豐富,營養價值很高的食物,其中維生素A,胡蘿蔔素和無機鹽含量比較高,而脂肪含量不但低,且多為不飽和脂肪酸,具有防治動脈粥樣硬化和冠心病的作用。另外,蝦的肌纖維比較細,組織蛋白質的結構鬆軟,水分含量較多,所以肉質細嫩,容易消化吸收,適合病人,老年人和兒童食用。
